I always love getting new recipes for yummy, easy and healthy food, don’t you? I’m visiting family right now and just tried out a great new recipe that I know will be a go-to healthy snack for the whole family once we get back home. As long as I have been married, I have been baking something (muffins, cookies, cake…you name it). I bake every week, usually two or three times all year long. I love having healthy baked snacks around. But, in the summer, with the feels-like-105 temperatures we are having in our neck of the woods, turning on that oven sometimes feels like a high price to pay. So, this recipe is great for multiple reasons. I can feel great about my family eating a good for you cookie. It’s so simple to make. AND, in the middle of the heat in the summer, I can make these without having to turn on the oven!!!
1/4 cup coconut oil
1/4 maple syrup
2 Tbsp cocoa powder
1 tsp vanilla extract
1 1/2 cups rolled oats
1/2 cup peanut butter (or nut butter of your choice)
Instructions: For this recipe, heat the coconut oil, maple syrup, and cocoa powder until blended. Remove from the heat and add the vanilla extract to the wet (and now hot) ingredients. In a medium size bowl, mix the remaining ingredients. Then, pour the hot mixture over the peanut butter and oats and blend together. Use a spoon to form into balls and place onto waxed paper on a cookie sheet and refrigerate for at least one hour (until firm).
You can also add chia seeds and ground flax into the mix to make it even more nutritious. If you want a grain free option, substitute chia seeds, flax, and shredded or flaked coconut for the oatmeal.
