I’m always looking for good recipes for health and tasty food. And, I’m partial to baked goods! We make cookies or muffins or both every week. But, I make a point to make them truly good-for-you (not just not-as-bad for you) goodies. In addition to always being on the lookout for a good recipe, I go through phases of just wanting to make new and different foods. I am in one of those phases now. So, while searching for a new muffin recipe, I discovered a coconut flour muffin recipe that looked pretty good. It had three different possible variations. Knowing the way my family likes things, I turned all three variations into one recipe. They are a hit!
6 Eggs (Room Temperature)
1/4 Cup Organic Unrefined Coconut Oil – Room Temp or slightly melted. (Or Grass-fed Butter – melted)
1/4 Cup Whole Coconut Milk (can also use Whole Milk, Whole Cream, or Plain Kefir)
1/4 Cup Raw Honey
1/2 Cup Coconut Flour
1/2 Teaspoon Sea Salt
1/2 Teaspoon Baking Soda
1 Teaspoon Organic Vanilla Extract
1/4 Cup Raw Cacao Powder – For the Cacao version.
1/2 Cup Chocolate Chips*
Preheat oven to 400 degrees.
Cream honey and coconut oil. Blend in coconut milk, followed by the eggs and vanilla.
In a separate bowl, mix together all the dry ingredients –except for the chocolate chips.
Slowly add the dry ingredients to the wet mixture until the batter is smooth. Let sit for 5-10 minutes to soak up moisture.Mix in your chocolate chips after the soaking period has ended.
Fill your muffin cups/tin and bake for about 15 minutes.
*You can leave out the cacao or the chocolate chips if that’s too much chocolate for you. There’s no such thing as too much chocolate around here! 😉
