My family and I were just on vacation for a little over one week. We don’t travel much with our toddlers. However, we have taken an annual trip to visit family out of state. I felt more organized and prepared than I have ever been. One of the little things that I did this year that made such a big difference for our transition back home was prepare a meal before leaving.
In the past, we would be so exhausted from a day of flying and just trying to get the children settled that it seemed figuring out what to do for dinner became an afterthought, even though we were usually starving by day’s end!
This time I decided that I’d simply double up a couple of meals just to ease the transition back home. The key word here is ease! It was wonderful! Rather than debating whether we should pick up something (that we wouldn’t feel great about eating anyway) or figure out what we could work with after being gone for 9 days, I already knew exactly what we were having. We actually had a choice!
The week before we left I intentionally made a couple of meals that I knew would freeze well. I was roasting a chicken. So, I roasted two at the same time. We had one for dinner and I shredded the chicken from the second bird. I then froze the chicken and cooked up some broth from its bones and skin.
So, last night, we had shredded chicken tacos that took very little to prepare. I simply heated and seasoned the chicken. Because I knew that’s what we would have upon our return, I made sure we had tortillas, cheese, salsa and onions. All those items store well and made for a yummy and very easy dinner after a very long travel day.
I have some split pea soup on the freezer also. That will make for another easy meal tomorrow or the following day! 🙂
