Our family has kicked off the holiday season. We put up and decorated the Christmas tree, watched two Christmas movies over the weekend and we tested our first batch of Christmas cookies 🙂
I thought I’d share this recipe because it was so simple and inexpensive. I simply modified a recipe I found here. I doubled the recipe because eight cookies could disappear in about five minutes around here. Then, per my husband’s request, I added chocolate. So, I turned them into Coconut flour Chocolate Shortbread Cookies.
Here’s the very simple recipe:
3 Tbsp. coconut flour
2 Tbsp. cold butter
1 Tbsp. honey
a pinch of sea salt
2 oz. dark chocolate
1 Tbsp. coconut oil
1 tsp. vanilla extract
1. Preheat oven at 365.
2. Mix all the ingredients in a food processor or with a mixer. Then, form eight balls. Place them on a parchment sheet lined baking pan and flatten onto the pan.
3. Bake for 9 minutes or until the edges are golden brown.
4. While the cookies are baking, heat coconut oil in sauce pan and add chocolate on low heat. When it melts, remove from heat and add vanilla extract.
5. After you remove the cookies from the oven, drizzle the melted chocolate over the cookies. I did this part very quickly (as you can see in the above photo). You can make your chocolate look nicer and neater 🙂
6. Let cool.
I love shortbread! So, this recipe works for our family because I can easily just leave the chocolate off of a few cookies for myself.
