An Easy Way To Get Your Child to Eat Veggies

It’s an issue I hear lots of parents talking about. How to get your children to eat vegetables. Broccoli, spinach, beets are on the forefront of my mind when I ask the question. We have some success with steamed broccoli and one of my children will eat beets in a salad I make. But, I have discovered the easiest way to feed them those green veggies…

This is the problem. How to eat these?

Step 1: Toss a bunch of fruit into a blender. I use frozen berries. Sometimes, I’ll have frozen mango or cherries. Add in a banana and milk or yogurt.

Step 2: Add your steamed green veggie. In this case, it’s broccoli. But, sometimes it’s spinach or beet greens (or some combination).

Step 3: Add in any other food that you want to sneak in. I like to add ground flax for a little Omega 3 in the mix. You may also need a little honey, depending on the sweetness of your fruit.

Step 4: Blend!

Step 5: Pour into an ice tray and add popsicle sticks. I have little helpers for this part 😉 (Please excuse the messy counter. Making coleslaw was next on my list.)

Cold and Flu Season Preparedness

I have heard and read that “cold and flu season is coming.” Well, in our home, it arrived a couple of weeks ago! My husband is a teacher, which means he is around sick teenagers (and teachers!) who don't always know or remember to actually cover their mouths when they are coughing or sneezing. We also have two little ones who touch everything and who are putting their hands in their mouths all the time….oh, when will that stop?! All that to say that we are now on Round 2 of being sick in our home.

Thankfully–and quite miraculously, if you ask me–I have not gotten sick. There are a few things we do around here, in addition to the standard hand-washing (which I do ALL DAY LONG when they are sick) to help prevent or shorten the duration of a cold or flu.

1. Apple Cider Vinegar. If I'm fighting something off, I'm taking 1-2 Tablespoons of organic raw apple cider vinegar throughout the day. This last week, I wanted to make sure I was drinking a lot of water, so I just put it in my water. I was probably taking 6-8 Tablespoons of the vinegar throughout the day. I am a believer in this stuff.

2. Raw Garlic. Lately, I have just made a point to add it to our meals. I like to put a couple cloves of crushed garlic into our spaghetti sauce after it is cooked. I usually like to add a little extra in our guacamole also.

3. Homemade Bone Broth. Once my husband got sick, I made a huge pot of chicken bone broth. I threw in a bunch of chicken bones that I had set aside from dinner. I chopped up some carrots, onions, garlic, celery, broccoli leaves (because we are growing broccoli in our garden) and some seasoning. I kept it cooking for about a week. Bone broth is great for the digestive system and for fighting off sickness. And, it has the added benefit of being a yummy comfort food! 🙂

4. Exercise. Did you know that exercising regularly is good for your immunity? This week I could feel the difference that exercise makes because on one of the days I could feel my throat beginning to feel like I could get sick, I went out for a run. I know that exercise is not always what you're supposed to do if you feel like you're getting sick. Wbat's key is listening to your body. I really felt like I needed a little workout. The next morning ended up being the first day (after several before then) that I didn't have that “I'm-getting-sick” feeling in my throat.

Yummy, Easy, Quick, Healthy Chocolate Muffins

I’m always looking for good recipes for health and tasty food. And, I’m partial to baked goods! We make cookies or muffins or both every week. But, I make a point to make them truly good-for-you (not just not-as-bad for you) goodies. In addition to always being on the lookout for a good recipe, I go through phases of just wanting to make new and different foods. I am in one of those phases now. So, while searching for a new muffin recipe, I discovered a coconut flour muffin recipe that looked pretty good. It had three different possible variations. Knowing the way my family likes things, I turned all three variations into one recipe. They are a hit!

6 Eggs (Room Temperature)

1/4 Cup Organic Unrefined Coconut Oil – Room Temp or slightly melted. (Or Grass-fed Butter – melted)

1/4 Cup Whole Coconut Milk (can also use Whole Milk, Whole Cream, or Plain Kefir)

1/4 Cup Raw Honey

1/2 Cup Coconut Flour

1/2 Teaspoon Sea Salt

1/2 Teaspoon Baking Soda

1 Teaspoon Organic Vanilla Extract

1/4 Cup Raw Cacao Powder – For the Cacao version.

1/2 Cup Chocolate Chips*

 

Preheat oven to 400 degrees.

Cream honey and coconut oil. Blend in coconut milk, followed by the eggs and vanilla.

In a separate bowl, mix together all the dry ingredients –except for the chocolate chips.

Slowly add the dry ingredients to the wet mixture until the batter is smooth. Let sit for 5-10 minutes to soak up moisture.Mix in your chocolate chips after the soaking period has ended.

Fill your muffin cups/tin and bake for about 15 minutes.

*You can leave out the cacao or the chocolate chips if that’s too much chocolate for you. There’s no such thing as too much chocolate around here! 😉
