Did you see this news story? It’s great news about a new study about how cocoa can actually help enhance our memory by facilitating blood flow to the brain. Well, I think that’s about all the excuse I need to not wait until November to start drinking hot chocolate! 😉
In honor of this good news, I thought I’d share a couple of recipes for you to enjoy a good for you chocolate treat!
3 tablespoons unsweetened c0coa powder (ideally, organic)
2 tablespoons raw honey
2 teaspoons organic vanilla extract
3 cups milk (organic whole milk or coconut milk…or milk of your choice)
2. In a small bowl, combine cocoa powder, honey and vanilla. Stir until it makes a paste
3. Add cacao mixture to the warm milk, stir until cocoa mixture has completely dissolved.
4. Serve immediately.
Healthy Chocolate Pudding
2 Tbsp Unflavored Gelatin
1/2 cup cool water
2 oz Unsweetened Dark Chocolate or Cocoa
1 can coconut milk, (use canned, full fat)
1 tsp vanilla
1/4 cup maple syrup/honey
Mix the chocolate (melt, if not using cocoa) with the coconut milk and sweetener thoroughly. Heat to warm and mix in the vanilla. Mix the gelatin with 1/3 cup of warm water until dissolved. Add the dissolved gelatin to the chocolate mixture and stir well. Put the pudding into the refrigerator for one-two hours or until set and chilled.
