It’s Monday so it’s time for planning this week’s meals. Remember it’s better to eat at home by cooking than eating out. In my experience one meal eating out for my family of 4 will feed us for 5 days at home. We love eating out, but I LOVE saving money! Here’s what we have on the plate this week. (no pun intended)
Pulled pork-This is SUCH an easy recipe. Throw a pork roast in a crock pot on low for 6 hour until you can easily shred it. Then shred it and pour your favorite BBQ sauce on it and let it cook for another hour and enjoy!
Coleslaw–HERE is my favorite recipe. It goes great on top of your pulled pork.
Chicken and rice casserole-This one is my favorite for leftovers. It’s one of those meals that taste better a day later. It also makes a TON so it’s good for having company. Plus it has veggies in it so you don’t have to make much more than this. This freezes nicely too so if you’d like to split it in two and freeze one portion, you’ll have a meal ready for another time too!
Cabbage roll casserole–If you’ve ever had cabbage rolls, you’ll love this casserole, plus it’s MUCH easier to make. My kids even like this. Plus lots of leftovers!
Beef stroganoff–This is another one of my crock pot favorites! It too makes enough to freeze. This recipe is really good too. I always substitute the cream cheese with sour cream though.
Semi-homemade pizza-I don’t make the crust, so if you this would be an even cheaper meal, but I just buy the pre-made crusts and it’s still really good. We also usually buy the pre-made pizza sauce which you can usually stock up on with coupons. It’s a great thing to have on hand. You can make your own too, but we try to keep this meal simple for mom (me). Put whatever toppings on you like and enjoy! My kids can even help with this and they have a blast!
