
Chili’s Fire Roasted Corn Guacamole
Eating out can be very expensive. Fortunately we Thrifty Divas are always posting good restaurant deals to help you save money. But another great way to save money is eating at home using copycat recipes from your favorite restaurants.
It make us very sad, but we don’t have a Chili’s anywhere near us and the thought of the Fire Roasted Corn Guacamole make me salivate. So I went on a mission to find a copycat recipe and I didn’t have to look far to find this one. It’s INCREDIBLE. I was very scared to fire roast vegetables, but this was SUPER easy so don’t let that stop you. It’s also grilling season although we grill in negative temperature. Using your grill will also help save money on your electricity bill since you won’t have to use your stove/oven as much. It’s a win/win situation. Yummy food + Saving money = Happy Thrifty Diva!
Here’s the amazing recipe for Chili’s Fire Roasted Corn Guacamole. I have no idea if it’s authentic, but it tastes the same as the restaurant version to me. It’s so good that I skipped dinner that night and me and my three-year-old just ate this.

What You Need
4 avocados
1/2 cup pico de gallo
1 -2 ears of corn
1 -2 whole jalapeno (don’t be scared of this in regards to spice. The frying and roasting cuts down on the heat)
3 tablespoons lime juice
4 teaspoons cilantro
2 teaspoons salt
Wash jalapeno(s) and deep fry for 1 minute.
Place corn on the cob and jalapeno(s) on gas grill and cook until slightly blackened on each side.
Remove corn kernels from cob and measure out 1 cup of kernels.
Finely chop jalapeno(s) after removing stem.
In a large bowl, mash the avocados.
Mix in pico de gallo, fire-roasted corn kernels, jalapenos, lime juice, cilantro, and salt.
Serve with tortilla chips and salsa.
