Remember a while back our post about our freezer meal party? All of our husband’s (and us) loved it so much that we decided to do it again this past weekend. We implemented our strategies that I listed before and everything went much smoother. We even managed to save almost $30 a person! Here’s a few more things we learned and my favorite recipe of them all.
1. The bigger kitchen the better. We changed locations this time and I found it easier to work in a larger kitchen. It may even be worth checking out a local church to see if you could use their kitchen.
2. Don’t be afraid to shop multiple places. We didn’t do that as much the first time and although it took longer, we saved money going to multiple places and shopping around.
3. Take a few recipes and make enough to freeze two meals per family. I don’t know why we didn’t think about this before, but instead of just one meal out of everything, we took a few recipes and made enough so each family could make two meals out of it. It was a lot less mess, not much more cost and we were able to add a whole other meal to our freezers.

In total we made 11 recipes, but have 15 freezer meals for four families. I’ve never seen so many happy husbands and it was so nice to just throw something in the oven last night.
Speaking of last night, we had my personal favorite freezer meal recipe and it’s so good, I want to share. It’s called Bird’s Nest Pie and it’s just amazing and so easy and cheap to make!
What you need
1 (16-ounce) package spaghetti noodles
2 eggs, beaten
1/3 cup Parmesan cheese
3 tablespoons melted butter
1 tablespoon dried parsley flakes
1 cup sour cream1
(3-ounce) package cream cheese
1 cup shredded Mozzarella cheese
1 pound Italian sausage
1/2 cup chopped onion
1 (6-ounce) can Italian tomato paste1 cup water
What to do
Cook spaghetti noodles in boiling, salted water for the shortest time recommended on package. Drain. Mix warm spaghetti with eggs, Parmesan, butter and parsley. Press into a round greased foil pan. Mix sour cream and cream cheese. Spread on top of spaghetti crust. Sprinkle with Mozzarella. Brown sausage with onion. Add tomato paste and water. Simmer 10 minutes. Pour on top of cheese. Cover, label and freeze. 10 servings. This recipe is awesome to divide in half and make two meals out of it.
To serve: Thaw. Bake covered for 45 minutes at 350. Uncover and top with Mozzarella cheese. Bake 5 minutes.
